Valentine's Day at ICE
The perfect Valentine's Day gift, a cooking class for two at the Institute of Culinary Education!
Be My Valentine – Valentine's Day is as much about decadence as it is about romance. Students will learn how to put together an indulgent menu and enjoy a lavish celebratory meal of lobster salad, sautéed hearts of palm with artichokes and cherry tomatoes, baked and stuffed potatoes Provençal, duo of beef with truffle sauce, and a trio of desserts.
Couples Cooking: The Bourbon Steakhouse – Couples will savor classic flavors updated with bourbon notes, as they work together to prepare and enjoy a menu of clams casino, NY Strip Steak au Poivre with bourbon cream sauce, truffled mashed potatoes, and much more!
Valentine’s Day Champagne Gala – In this very special Valentine's Day celebration, attendees will dine on beautiful hors d'oeuvres along with a select group of wines. After a discussion and tasting of sparkling wines, students will enjoy a buffet paired perfectly with their favorite bubblies.
Valentine’s Day Macaron Treats – In this class, you’ll learn how to make beautiful French macarons featuring unique fillings. Students will also learn how to pipe perfect heart-shaped macarons and cook a variety of jams to fill them with. Plus you’ll take some home for a Valentine’s Day treat.
Chocolate Confections – Under the guidance of skilled ICE pastry chefs, students will master tempering white, milk and dark chocolate and learn essential methods for making various chocolate confections and hand-dipped truffles. They'll also learn a wide assortment of elegant and colorful chocolate decorating techniques. At the end, they’ll leave class with an array of sweet treats, from caramel-peanut truffles and earl grey tea truffles to chocolate sucettes and chocolate-dipped strawberries.
Knife Skills for Couples – Partners will learn how to slice, dice, and chop in the safest and most efficient manner as they prepare a menu of plantain chips with mango-jalapeno salsa, guacamole with tortilla chips and sangria. Price: $220
Couples cooking: Burgers & Beer – In this class created specifically for couples, students will learn to make burgers for every taste and sides for every craving, alongside a thirst-quenching selection of beer and beer cocktails. Price: $275
Knife Skills 1 –– Knowing how to use knives skillfully is the foundation of all cooking, and doesn't have to be scary or frustrating. In this class students will learn how to slice, dice, chop, and much more in the safest and most efficient manner. This class will even guide students through the practice of keeping their knives sharp and handling them correctly.
Pasta 101 –– Students will learn to cook both fresh and dried pasta, as well as an array of sauces to complement each. They will make fresh pasta dough by hand, in a standing mixer, and in a food processor, then roll, cut, and fill it, making a variety of pasta, including spaghetti carbonara, orecchiette with broccoli rabe and spicy sausage and ricotta-filled ravioli.
Seafood 101 –– While learning to make some of the most justly famous seafood dishes in the world, students will also learn seafood cooking techniques that they’ll return to again and again. Whether working with shellfish, assembling lobster rolls, or making perfect sauces for their fish, they'll create a memorable meal for everyone to enjoy!
Best Homemade Pizza –– Whether a fan of thick or a thin crust, with tons of sauce or no tomato at all, this class will give students a repertoire that includes just about everyone’s favorite. They’ll begin by learning to make dough for both thick- and thin-crusted pizzas, and while the doughs are rising, prepare various toppings.
The Cookie Jar –– After taking this class, there's no cookie students won't excel in! They'll make and take home a full spectrum of cookies, including chocolate cloud cookies, raspberry jam thumbprints, rum-raisin shortbread and cinnamon sugar palmiers.
Baking 101 –– This class is perfect for those that want to learn the fundamentals (and more) of baking without enrolling in cooking school. In three information-packed classes, students will explore pies, brownies, cupcakes, muffins, pudding, sweet sauces and so much more.
Pizza! Pizza! A Class for Parents & Kids ages 9 & up –– In this fun-focused class, kids and their parents will spend a morning or evening making, and then eating, all kinds of pizza. You'll work together to make pizza dough and tomato sauce; then you'll use various toppings to construct and bake: White Pizza; Cheese Pizza; Vegetable Pizza; Sausage Pizza; Spinach and Cheese Stromboli; and Nutella & Banana Pizza.
